A traditional Caribbean rum cake is a dense cake. It's dark brown in color and is referred to alternately as black cake or fruit cake or great cake. This traditional cake gets its characteristic color from the fruits and food coloring used in the recipe. Its density is derived from the fruits rasins, currents, dates, prunes etc which are ground and marinated in an spirits mixture including Barbados rum. 
This fruit mixture is traditionally prepared by a few months in advance and the older it is aged it gives the cake greater character and more richness. 
This traditional Caribbean rum cake is made particularly at Christmas but is also a special occasion cake in the islands; for weddings, birthdays,  anniversaries and even corporate functions.
